Asian Steak & Noodle Salad
Now the nights are getting lighter and ever so slightly warmer, I have been having crazy cravings for super fresh, crisp meals. One of my favourite meals to start cooking in the warmer months are noodle salads; whether I'm scrolling my feed online or flicking through the pages of a magazine, if I see a noodle salad, it stops me in my tracks! I'm not sure if it's the multitude of colours bouncing off the screen or that I can imagine the zingy dressing that coats the noodles and kick of heat - whatever it is, they always get me, and hopefully this recipe entices you just as much!
Imagine this. Start with thinly sliced carrot, cucumber and red onion for crunch. Then, little bursts of sweetness from cherry tomatoes, followed by fresh flavours of mint, basil and coriander. Next, you get a kick from some fresh chilli with a hint of garlic and ginger that coats the medium rare steak, all rounded off with a tangy sweet chilli soy dressing that sits amongst a bed of noodles. MMMMHMMMM.
You can use any noodles for this dish; soba, vermicelli, glass, or what I used (wait for it...) Maggi 2 Minute Noodles with Invisible Wholegrain. You heard me right! This product completely goes past it's stigma for being the students dinner of choice - they're now made with invisible whole grain, are so versatile and best of all, they take 2 freaking minutes to cook. Bulked up with fresh veggies and extra added flavour from be it dressings or protein with marinade, I'm sure you'll see how great they can be! Ingredients (serves 2)
Dressing
- 2 garlic cloves, finely chopped
- 1tbsp ginger, finely chopped
- 1 steak
- 2 packets Maggi Beef 2 Minute Noodles with Invisible Wholegrain (reserve one flavour packet)
- 1/2 carrot, julienned
- 1 small cucumber, deseeded, halved and sliced
- 1/2 red onion, finely sliced
- 1/2 chilli, finely sliced (if desired)
- 1/2 cup bean sprouts
- 6-8 cherry tomatoes, halved
- 1/4 cup of mint, coriander and basil, torn
- S & P
Dressing
- 1/2 cup sweet chilli sauce
- 1tbsp fish sauce
- 1tbsp soy sauce
- 1tbsp lemon or lime juice
- 1/2 tsp sugar (if needed)
Method
- Bring a pan to a medium heat with a drizzle of rice bran oil, saute the garlic & ginger until tender, then remove from the pan.
- Turn up the heat to high, then pan fry the steak to medium rare (or your desired cook). When there is one minute of cooking left, place the garlic & ginger on top of the steak, then remove the steak and rest until cool.
- Place the dried noodles in a microwave safe bowl, break into quarters, then cover with 3 cups of boiling water. Microwave on high for one and a half minutes, then add in the flavour packet, stir through and leave to sit for 5 minutes.
- To make the dressing, stir together all the ingredients in a bowl.
- Drain the noodles and add them to a large bowl. Pour over half of the dressing and toss to coat.
- To the noodles add the fresh vegetables, herbs and chilli. Toss to combine.
- Thinly slice the steak, then add to the salad along with the garlic, ginger, any juices from the steak and the remaining dressing. Toss again to combine.
- Serve with extra fresh herbs and enjoy! Store in the fridge for 2-3 days.
