Black Forest Ice Cream Cake
Ice cream cake is a treat from our childhood - layers of blue bubblegum and mellow banana would be the star of the show at any 90's kids birthday party, so with it being the silly season I wanted to reinvent this humble classic into a slightly more fancy schmancy showstopper for your next dinner party! The one thing I always missed in the old school version was a little bit of texture, so this ice cream cake starts with a crisp oreo case, which also adds to the mystery of what lies inside. Next we have two flavoured ice creams as our base, Chocolate Fudge and Vanilla ice cream from Corner Dairy by Kohu Road. These ice creams are BOMB. They have minimal preservatives and high quality ingredients, which means they reach that perfect melty consistency in no time! I amped them up with some berry biscuit chocolate and fresh fruits for that black forest flavour - this time of year is perfect for fresh strawberries, raspberries and cherries.
The final extra step is in the decoration, this is totally optional but I had so much fun coming up with my topping. Set yourself up with some extra berries, melted chocolate, chocolate chunks, cookies etc and go with the flow! See what you come up with. Can't wait to hear what you think of this dessert! Method
- In a food processor, blend the Oreos into a fine crumb, then transfer into a bowl and mix with the melted butter.
- Line a cake tin with plastic wrap, then press the cookie crumbs into the base and the sides. Refrigerate until completely set.
- In a bowl, soften the Corner Dairy Vanilla ice cream for 5 minutes, stirring every minute. Chop the chocolate into small pieces, then combine with the ice cream. Spoon half of the mixture into the Oreo case, and return the other half to the freezer.
- While the first vanilla layer is setting, soften the Chocolate Fudge ice cream and combine with the diced strawberries, halved cherries and raspberries. Layer this into the case on top of the first vanilla layer, freeze, then top with the remaining vanilla mixture.
- Freeze overnight, then turn out onto your chosen plate to serve. Garnish with additional fruits & chocolate if desired!
