Grilled Pineapple with Minted Lime Yoghurt
This recipe is a little sneak peek from my new e-book, Clean Treats by Rhi. In this video, I show you how to cook my Grilled Pineapple with Minted Lime Yoghurt, the perfect, easy recipe for summer. Fresh pineapple is caramelised on a grill pan with a sprinkle of coconut sugar, cooked until warmed through and golden in colour. Served with Greek yoghurt laced with fresh lime and sliced mint, this dessert is fresh and sure to be a crowd pleaser.
You will need:
1 pineapple
4 tbsp coconut sugar 2 tbsp coconut oil 400g Greek yoghurt |
1/4 cup fresh mint
Zest and juice of one lime |
