S'mores Inspired Brownie Ice Cream Sandwiches
Ingredients
200g vegan milk chocolate
½ cup vegan margarine, plus extra for cooking
1 cup plain flour
⅔ cup cocoa powder
1tsp baking powder
2tsp cornflour
1 cup caster sugar
⅔ cup dairy-free milk
2 x 3 pack Streets Magnum Dairy-Free Ice Cream Classic
3 slices bread, torn into small pieces
Dash of maple syrup
½ cup vegan marshmallows, quartered

2tsp cornflour

⅔ cup dairy-free milk
2 x 3 pack Streets Magnum Dairy-Free Ice Cream Classic
3 slices bread, torn into small pieces
Dash of maple syrup
½ cup vegan marshmallows, quartered
Method
- Preheat your oven to 180 degrees celsius fan bake. In a heatproof bowl, melt the chocolate chocolate with the margarine in the microwave, melting in 30 second bursts and stirring in between each burst. Once melted, set aside to cool slightly.
- In a separate bowl, sieve the flour, cocoa powder, baking powder and cornflour, then add the sugar and a pinch of salt before whisking to combine.
- Pour the cooled chocolate mixture and dairy-free milk into the dry ingredients, then whisk gently to combine.
- Transfer to a lined square cake tin, then bake for 25 minutes or until the edges have started to pull away and the centre has just set. Remove from the oven and leave to cool completely.
- Once the brownie has cooled, re-line the same tin and lightly crumble two thirds of the brownie into the base.
- In a non-stick pan, melt a small amount of margarine or coconut oil over a medium high heat. Add the torn bread and toast until golden, then drizzle with maple syrup and toss to coat.
- In a bowl, remove the Streets Magnum Dairy-Free Ice Cream Classic’s from the sticks then use a wooden spoon to lightly break the ice creams and chocolate, and continue to do so until the chocolate and ice cream are combined and spreadable.
- Spread the ice cream evenly over the brownie base, then sprinkle over the remaining brownie. Place the marshmallows on top, followed by the bread pieces, then press down on the surface of the brownie sandwiches to help the toppings stick.
- Wrap or cover tightly, then freeze overnight. Once completely frozen, use a blowtorch if desired to toast the marshmallows, then cut into bars and enjoy!
