Spiced Beef and Feta Pita with Cumin Minted Yoghurt
Yay I finally got around to doing a dinner recipe! This recipe is an adaptation of a Donna Hay dish I made a while ago; it is super easy, absolutely delish and fairly cheap!
Starting with a wholemeal pita, minted cumin yoghurt, spiced beef mince, caramelised onions, tomatoes, pine nuts and feta are layered to create an amazingly tasty and filling dinner, that is just as beautiful as it tastes.
This is suitable for any day of the year, and would be just as good without the pita and served on a bad of spinach for a lighter, carb free version. This is also perfect for kids as they can help you in the kitchen, and will get them interested in a few flavours they may not have tried before, or wouldn't usually eat.
I highly recommend this dish, it is a family fave in my house and may soon be in yours as well.

You will need (serves 4):
500g beef or lamb mince
2 garlic cloves, crushed or finely chopped 1 tsp ground cumin 1/4 tsp paprika 2 tsp rosemary, finely chopped 1 tbsp mint, finely chopped 1 cup spinach salt and peppper 1 red onion, sliced 1 tbsp balsamic reduction 1 tsp butter |
1/2 cup greek yoghurt
1 tbsp mint, finely chopped 1 tsp ground cumin 10 cherry tomatoes 50g feta cheese 2 tbsp pine nuts, lightly toasted olive oil, to drizzle extra mint leaves |
Method:
- Heat a pan over a medium to high heat, using a little bit of oil if it isn't non-stick.
- Add the mince to the pan, and cook until brown and broken up. Lower the heat to medium, and add your garlic, 1tsp of cumin and paprika. Cook for a couple of minutes until the garlic has softened, then add in your rosemary, mint and spinach and continue to cook until the spinach has wilted.
- In a small pot, combine the sliced red onion, butter and balsamic and cook slowly over a low heat until soft and sticky.
- Lastly, in a small bowl, mix the remaining mint, cumin and some seasoning into the greek yoghurt.
- Heat your pitas, and layer the yoghurt, mince mixture, onions, tomatoes, pine nuts, feta and some extra mint if desired, then finish with a drizzle of olive oil. Enjoy!
