Whiskey Glazed Steak w/ Onion Rings & Broccoli
With Christmas and New Years Eve just around the corner, now is the perfect time to have friends and family round for a bite to eat and chats to celebrate the silly season. This dish is a fab New Year's treat, being a little bit indulgent and the perfect thing to share with friends with a beer in hand. The whiskey glaze is smokey, sweet and salty with a hint of rosemary - which works well with this delicious cut of beef, Flat-Iron Steaks from Silver Fern Farms. This 'ugly' cut is super tender and has a rich meaty flavour, which balances out the flavours of the glaze and is a popular cut in the US for BBQ style dishes like this. I chose to pair this with some light and super crispy tempura style onion rings, and some pan fried broccoli with garlic and almonds (inspired by my fave at Burger Burger).

Method
- To make the glaze: In a pot, combine the whiskey, brown sugar, rosemary and optional liquid smoke. Stir over a medium heat until the sugar has dissolved, then simmer until the glaze reduces by half and becomes sticky. Leave to cool slightly, season with salt to taste and set aside.
- To make the onion rings: In a bowl, combine the plain and cornflour in a bowl. Whisk in the sparkling water until smooth, and set to the side. Peel the onion, then cut into 1cm thick slices. Separate into rings. Heat a fryer to the correct temperature (see guide in fryer). Dip the onion ring into the batter, shake off the excess and carefully drop into the fryer and cook until crisp and lightly golden. Drain on a paper towel to remove the excess oil.
- To make the broccoli: Cut your broccoli into florets, then blanch in boiling water for 3 minutes. Drain from the water. In a frying pan, melt the butter and a drizzle of oil over a high heat. Fry the broccoli and garlic until golden, add in the almonds and cook for another minute.
- To finish: Heat a frying pan on high, then add a drizzle of olive oil. Place the steaks in the pan, cooking for 3-4 minutes on each side. Continue to baste the steak with the glaze as it cooks. Once cooked, rest on a chopping board for 5 minutes and season. Serve with the onion rings and broccoli.
