Summer Berry & Macadamia Bircher



Breakfast time! This recipe is for my summer berry & macadamia bircher muesli -  perfect for porridge lovers who want to shake things up a little bit with a fresher start to the day. Still starting with a base of oats, except instead of cooking the oats, they are soaked in a mixture of milk, apple juice and yoghurt, which results in a cool, creamy texture that has a little bit of bite. The yoghurt and milk are a great way to get dairy into your day, and leaves lots of room for experimentation! I used plain Greek yoghurt, but why not try your favourite flavoured yoghurt, and switch the apple juice for orange?

To add some extra dimension to this muesli, I stirred through dried blueberries and chopped macadamias, then scattered on top some fresh blueberries, raspberries, macadamias and a little drizzle of runny honey. This is the perfect dish for those wanting to meal prep as well, as you can prepare this in bulk and flavour it to your cravings each day - it is an incredibly versatile base!

Ingredients (serves 1-2)
  • ½ cup rolled or quick cook oats
  • 2tbsp apple juice
  • ¼ cup Greek yoghurt
  • ¼ cup milk
  • 1tsp vanilla extract
  • 1 heaped tbsp dried blueberries
  • 1tbsp chopped macadamias
  • To serve: fresh blueberries, fresh raspberries, chopped macadamias, honey

Method

  1. In a bowl or jar, stir together the oats, apple juice, yoghurt, milk and vanilla. Add in the dried blueberries and chopped macadamias, then cover and allow to soak in the fridge for 4 plus hours.
  2. When ready to serve, sprinkle over fresh berries and macadamias, then drizzle with honey if desired. Store in the fridge for up to 4-5 days.
