Bircher Muesli with Berry Compote

When someone thinks of a filling, satisfying breakfast, they may initially think of the classic kiwi breakfast; bacon, eggs and all of the trimmings. But what happens when you don't feel like a full cooked breakfast, but still want something just as substantial? Look no further! 

Bircher muesli is a popular breakfast food around many countries, and can be made many different ways. My version is a healthy, nutritious version; it contains no refined sugar, and is made with pure greek yoghurt. The texture and flavour that the grated apple gives is super fresh and provides natural sweetness. To add a little more sweetness, I have used coconut sugar; a sugar that is low GI and retains many of it's essential nutrients, making it a lot more beneficial than refined white sugar.

Topped with berry compote and cacao nibs, the flavours all work in perfect harmony, and I hope you love this breakfast as much as I do! 

Although this recipe is not dairy free, you could easily replace the greek yoghurt for coconut based yoghurt, or even coconut cream. X


You will need (makes 3):
1 1/3 cups rolled oats

1 apple, grated

3/4 cup greek yoghurt

1/3 cup 100% apple juice (make sure it has no additives

1-2 tsp coconut sugar (dependant on apple's sweetness)

1tsp vanilla bean paste
cacao nibs, optional

Compote:

1 cup frozen berries

1 tsp coconut sugar

squeeze of lemon juice

Method:
  1. In an medium sized bowl, combine the oats, grated apple, greek youghurt, apple juice, coconut sugar and vanilla bean paste.
  2. Mix until completely combined, have a taste and see if it is sweet enough, then cover with plastic wrap and pop in the fridge overnight.
  3. To make the compote, combine all of the ingredients in a small pot. Let the berries cook out to your desired texture, place in a bowl, cover with plastic wrap and put in the fridge also.
  4. To serve: Take your muesli from the fridge. You will find that the mix has become quite tight, so loosen with a little more yoghurt or apple juice until it has softened slightly.
  5. Spoon into bowls, top with your berry compote and sprinkle with some coconut sugar and cacao nibs! 


This can be kept for up to 4 days, just continue to loosen the mixture to your desired consistency X
