Naughty and Nice: Two ways to transform your muesli in 5 minutes!

Last Bloggers club we were set a challenge; use the new Kellogg's Apricot and Almond High Fibre Muesli in the most creative way possible. This could be anything from ways to use it to how to exercise after eating it, but of course, I chose to turn it into two DELISH recipes that only take a few minutes to make!

Muesli is generally seen as a breakfast item, served with milk and a spoon. Lets be honest, good for the first few spoonfuls, but generally can be a tad boring. So I have created two recipes that only have five additional ingredients, and take five minutes to make! Totally delicious breakfasts, that will leave you wondering how you have eaten plain old muesli by itself for so long?!

There is something to please both the naughty and the nice, the health concious and the chocolate lovers, the clean eaters and the risk takers! Trust me, these are both as good as each other.

First I introduce you to what I think could be the next cronut! A Nutella French Toast Sandwich with Sugared Muesli Crunch, and oh boy, I could eat these 3x a day, seven days a week. Sweet, buttery muesli encrusts two thick slices of white bread, oozing with warm nutella and the comforting taste of custardy french toast.

All you will need is:
  • 2 thick slices of white bread
  • 1/4 cup Kellogg's Apricot and Almond High Fibre Muesli
  • 1 egg
  • 2tbsp milk
  • Nutella
  • 1tbsp white sugar
  • Butter if desired 

  1. In a bowl/dish, whisk together the egg, milk and a teaspoon of the sugar. 
  2. Generously spread a slice of bread with nutella, and sandwich the two pieces together. 
  3. On a plate, combine the remaining sugar with the muesli. 
  4. Heat a pan with some butter. Take your sandwich, dip it into the egg mixture on all sides, then coat in the muesli.
  5. Place in the pan and cook on both sides until golden, crispy and until the egg has cooked through. Yum!

And now for the not so guilty, but just as delish nice recipe! Vanilla Yoghurt, Rasberry Chia Jam and Muesli Parfait, layers of creamy yoghurt speckled with vanilla, tart raspberry chia jam and crunchy, textural Kellog's muesli! The addition of chia seeds adds a huge amount of additional nutrients, and provides the same texture as classic jam, without all the sugar. You will need to make the jam the night before, but it will last a long time of you make it in bulk.

All you will need is:

  • 1 cup greek yogurt (sweetened if desired)
  • 1tsp vanilla extract
  • 1/4 cup Kellogg's Apricot and Almond High Fibre Muesli
  • 1/4 cup raspberries
  • 2tbsp chia seeds
  • 2tsp coconut sugar


  1. To make the jam: Puree the raspberries with the coconut sugar, transfer to a container and combine with the chia seeds. Leave to thicken overnight.
  2. Combine the vanilla extract with the yoghurt. 
  3. Layer the muesli, jam and vanilla yoghurt. Easy as that! 


You need to make these one morning, I promise you won't be left with any disappointments!
