Blueberry Glazed Waffle Cakes

As soon as I saw this recipe online, I was absolutely dying to make it. It's a waffle, with all the moist, cakey goodness of a muffin, finished with a sweet but tangy blueberry glaze you would find on a doughnut. 

This recipe originated from Bakers Royale , one of the most amazing food blogs with stunning photography that will leave you drooling over all of their beautiful creations. I used OOB Organic Frozen Blueberries which provide a sweet and tart blueberry flavour that encompass all things yummy in this recipe. 


This recipe would also work well in a sandwich/panini press if you don't have a waffle maker, but you may be able to convince a friend to lend you their waffle maker in exchange for a few of these beauties.

I highly recommend whipping a batch of these up, and trust me when I say, they will not last longer than a day around sticky fingers like mine.

You will need (makes 12ish):
1/2 cup unsalted butter, melted

1/2 cup brown sugar

1/4 cup granulated sugar

1 egg

1/4 tsp vanilla extract or paste

1 1/4 cup flour

1/2 teaspoons baking soda

zest of one lime

1/2 cup defrosted or fresh blueberries. lightly mashed
1/2 cup defrosted or fresh blueberries

1 tablespoon water

1 cup icing sugar

juice of one lime 


Optional: freeze dried blueberries

Method:
  1. In a large bowl place whisk together butter, sugars, egg and vanilla extract until well combined.
  2. Combine the flour, baking soda and lime zest; gradually whisk into wet mixture.
  3. Fold in the mashed blueberries.
  4. Drop 1 heaped tablespoon of batter (or use a cookie scoop) onto waffle maker. Close the waffle maker and cook until golden brown. Remove and transfer waffles to a wire rack, cool completely before glazing.
  5. In a small sauce pan over medium high heat, cook blueberries and water until mixture resembles thick syrup; strain blueberries by pushing them through a sieve. Combine blueberry syrup with icing sugar and whisk until smooth. Add lime juice and whisk to combine.
  6. Once the waffles have cooled, dip waffles in glaze and let dry, sprinkle over the freeze dried blueberries if desired. Enjoy!
