Candied Pecan, Bacon and Cranberry Trail Mix

I think I have accidentally created the most delish trail mix on the whole planet. I am not the biggest fan of plain nuts as a snack, think it is a texture thing, but I am always looking for new ways to use them.
Today, I had a major craving for candied bacon after watching an episode of The Kitchy Kitchen, but I was also looking for a sweet treat that I could have on hand for snacking on when I need a hit of sweetness during the day.
That is where this treasure came along. Bacon and pecans candied in some pure maple syrup and coconut sugar, combined with slightly salty pistachios, almonds, dried cranberries and little chocolate chunks that come together in perfect sweet and savoury unison!
The bacon is totally optional as some aren't on the sweet bacon bandwagon, but the candied pecans make this recipe. Alternatively, you could rid of the chocolate for a fully Paleo treat.
I am munching on this treat as we speak, and I will be making more in the next few days without a doubt.

You will need:
1 cup raw pecans
1 cup pistachios, salted 1/2 cup almonds 2 rashers streaky bacon |
2 tbsp pure maple syrup
2 tbsp coconut or unrefined brown sugar 1/4 cup dried cranberries 6 squares dark chocolate, chopped into chunks |
Method:
- Preheat the oven to 200°c fan bake. Line a baking tray with greaseproof paper.
- In a small bowl, combine 1tbsp of the maple syrup and 1tbsp of the sugar, and mix into a paste. Put the pecans into the sugar mix, and toss well until coated.
- Sprinkle onto your lined tray, and bake in the oven for 10 minutes, tossing once during this time. Once sticky, remove from the oven and cool.
- On another lined tray, lay the rashers of bacon down. Pour over the remaining maple syrup, and rub all over the bacon. Then sprinkle with the remainder of the sugar, and place into the over until crisp and sticky. Cool.
- In a bowl, combine all of the other ingredients, along with the cooled pecans, Cut the candied bacon into pieces, and add to the bowl. Toss until well combined and enjoy! Store in the fridge.
