4 Ingredient Cheesecakes with Strawberry Salsa



It’s time for dessert - safe to say, this is my favourite healthier recipe. Why you ask? Well for one, it’s cheesecake, and if that wasn’t enough, it only has four ingredients. FOUR. Okay, if you count the salsa 7, but the base of this cheesecake can work with any type of topping, or no topping at all.

Unlike your typical cheesecake there is no baking involved, no added sugar and no butter. I know that sounds like I’m taking the fun out of it - but along with this being that bit healthier, it’s still equally as indulgent without that post cheesecake OD feeling. With a base of cream cheese and your favourite yoghurt (I used passionfruit Piako) with a dash of vanilla, the only other ingredient is a crushed digestive biscuit at the base. This is the perfect ending to a summer meal!

Ingredients (serves 4)


  • 190g cream cheese, softened
  • 1 cup fruit yoghurt of your choice
  • 1tsp vanilla extract
  • 4 digestive biscuits, 1 per serve
  • 4 large strawberries, diced
  • 2 large mint leaves, finely sliced
  • 1 tsp melted honey


Method

  1. Crumble biscuits into jar/cup of your choice (I used stemless wine glasses).
  2. Using an electric beater, mix together yoghurt and cream cheese until smooth.
  3. Evenly distribute the filling amongst 4 glasses, then place in the fridge to chill.
  4. In a small bowl, stir together strawberries, honey and mint
  5. Top cheesecakes with strawberry salsa and serve, or cover and store in the fridge for up to 3 days*.

*If serving at a later date, leave strawberry salsa separate to cheesecakes until serving.
