Chocolate Coconut Nests

Although Easter is about alot more than chocolate, these Chocolate Coconut Nests tick allll of the boxes! Hanging out in the kitchen is a  great opportunity to spend some time with your loved ones, although it's fair to say we've been able to spend a fair bit of *quality* time with our bubbles thanks to covid-19 lockdown! Nonetheless, these delicious Chocolate Coconut Nests are incredibly delicious and only need 5 ingredients, usually ones you'll have in your pantry as well.

Simple and totally moreish, with hints of toasted coconut nestled amongst crunchy cornflakes and creamy chocolate. This Easter will surely be one to remember, so why not make some treats to enjoy with it!

INGREDIENTS (makes 10-12)

  • 200g 50% dark chocolate, chopped
  • 50g coconut oil or butter 
  • 1/2 cup shredded coconut
  • 3 cups cornflakes
  • Chocolate mini eggs, to finish
METHOD

  1. Place the chocolate and coconut oil in a heatproof bowl, and place over a pot of simmering water. Stir until completely melted, then remove from the heat. 
  2. In a small frying pan, toast the coconut over a medium heat until golden in colour. Add to the chocolate mixture, followed by the cornflakes. Stir well until the cornflakes are coated evenly in the chocolate and all ingredients are fully incorporated. 
  3. Spoon two tablespoons of mixture onto a lined baking tray, keeping to a circular shape. Repeat until the mixture is used, then nestle 2-3 mini eggs on top. Place into the fridge to set for a minimum of 2 hours or until completely set. Enjoy and store in an airtight container in the fridge or a cool, dark place.
