Grilled Corn with Chilli Lime Mayo 



Okay, so corn is one of my favourite vegetables in the summertime, and it’s extremely versatile. Classically I’d slather it in butter and salt (drool), shave the kernels straight on top of a salad or add to a fresh salsa, but this time I wanted to try my hand at Mexican grilled corn. Typically, butter is used on top, but I wanted to put my little twist on this recipe and use mayonnaise!

Best Foods with a Spark of Chilli Mayonnaise has become a staple in our pantry, so I used this as a base along with some crisp spring onion from our garden and lime zest. Spread this spicy and slightly tangy mayo mixture all over a sweet, charred corn cob straight off the BBQ and top with some sharp cheddar, chilli flakes and fresh coriander - you’ll be in summery food heaven.
This dish is great as it requires minimal ingredients, and took 20 minutes max to make - perfect for those warm, cruisy summer evenings. If you buy the mayonnaise, also give my Fried Chicken and Spicy Slaw sandwich a go. Even better, I think they’d amaziiiiiing served together.
You can find the range in your local supermarket, and if you aren’t the biggest fan of spice, replace the Chilli flavour in either of the recipes for one of the other flavours such as Best Foods with a Touch of Garlic (or a Zing of Lemon, or Pinch of Mustard).

Ingredients
  • ⅓ cup Best Foods with a Spark of Chilli Mayonnaise
  • 1 tbsp finely sliced spring or red onion
  • Zest of ½ a lime
  • 2 corn cobs
  • Chilli flakes
  • Fresh coriander
  • 2 tbsp sharp cheddar, finely grated
  • Fresh lime, to serve
  • S&P

Method
  1. In a bowl, combine the mayonnaise, onion and lime zest. Stir to combine and set aside.
  2. If your corn cobs aren’t in the husk, wrap tightly with tin foil, then place on a hot grill or BBQ. Turning occasionally, grill for 15-20 minutes until well coloured (don’t be afraid to char the corn).
  3. Remove from the foil or husk, then slather each with the mayonnaise mixture. Top with a sprinkle of chilli flakes, fresh coriander and grated cheese, finishing with a squeeze of fresh lime juice and seasoning. Enjoy immediately!
