BBQ Halloumi & Vegetable Skewers



Now is the perfect time of year to make the most of your BBQ, and these Halloumi Vegetable Skewers are the perfect excuse. Halloumi is one of my all time favourite dairy products so I knew I wanted to incorporate it into the 7 days series. With a lunchtime theme to fit the recipe around, I wanted something that made the halloumi shine, but kept within the realm of healthier alternatives! So taking it back to basics, we have these skewers. I paired the halloumi with some red onion and cherry tomatoes for sweetness, along with capsicum and courgette - which are both vegetables that withstand cooking really well. Finished with a generous drizzle of basil pesto thinned out with a little olive oil, these are the epitome of summer! These are incredibly easy to make extra of too, so double the recipe and have some ready in the fridge for later in the week.

Ingredients (makes 7-8)

  • 8 wooden skewers, soaked in water for 1 hour
  • 200g halloumi cheese
  • 1 capscium, cut into pieces
  • 2 courgettes, cut into 1cm rounds
  • 1 small red onion, cut into chunks
  • 7-8 cherry tomatoes (1 per skewer)
  • 2tbsp basil pesto
  • Olive oil
  • S&P


Method

  1. Cut the halloumi block into chunks*.
  2. Take a skewer and skewer on vegetable pieces and halloumi chunks. Once completed, brush each vegetable skewer with olive oil.
  3. Bring a BBQ to a medium high heat. Once heated, lay down the skewers. Grill on each side until a charred golden colour, and the vegetables have cooked.
  4. Once cooked, lay on a plate or platter. In a small bowl, thin out the pesto to a drizzling consistency with olive oil.
  5. Drizzle the pesto over the skewers, and finish with salt and pepper. Serve immediately.

*I cut mine into 15 pieces, which gave me 7 skewers.
