Lemon Cordial, 3 Ways
Now that the days are getting darker and colder, I thought it would be perfect to make something to remind us of the summer; and what says summer more than homemade lemonade!
Starting with a base recipe, I have created 3 ways to use the cordial, to fit all tastes and moods. Classic lemonade was a must; this zesty drink is super lemony and refreshing. Next I created a raspberry lemonade, the flavour of the raspberry really shines through and brings the lemonade to life. The last was flavoured with honey and mint; this would be amazing served warm in these chillier winter months!
Another aspect of these is that they can be transformed into punch at a party, add some vodka or gin for a fruity drink that is sure to impress. Either way, they are just as delicious as each other, and will become a staple drinks recipe in your collection! X

For the cordial base, you will need:
4 Meyer lemons, or 5 standard lemons
1 cup white sugar 2 cups water |
1tsp tartaric acid
1tsp citric acid |
Method:
- Combine the sugar and water in a pot, a place on a medium heat.
- Stir occasionally, until the sugar has fully dissolved into the water. Add the citric and tartaric acid, and stir until completely dissolved.
- Pour into a jug, and add the juice of your lemons. Stir to combine, and refrigerate.

Lemon, mint and honey soda
- In a glass, fill a third with lemon cordial.
- Add a teaspoon of honey, and stir well.
- Add a few sprigs of mint, and stir well to ensure the mint flavours the cordial.
- Top up with soda water and enjoy!

Raspberry Lemonade
- Take a half cup of frozen raspberries, and microwave them until the are soft.
- With a fork, smush them until there are no longer any whole raspberries, and the seeds are dispersed through the liquid.
- Strain the liquid into a bowl, discarding the seeds. Mix this with the lemon cordial to taste.
- Fill a glass a third of the way with the raspberry and lemon cordial.
- Add some slices of lemon, frozen raspberries, top up with soda water and serve!
