I’m not one to set resolutions, but I have to say one of my goals for this year has been to try and a) plan out my week of meals more and b) actually go food shopping.

Finding the time to go food shopping can be extremely difficult, especially if you have a busy family to work around, so I was looking for a way to make life a little easier.  To save you even more time this week, I’ve put together a weekday meal plan for you! Meals for your next Monday through Friday, with recipes to match! Plus, you'll find below my recipe for Loaded Mexican Hotdogs; a twist on a family classic, with some salsa punch and smokey chipotle sour cream. These are heavenly!


Ingredients (serves 4)

  • 4 pork sausages (I used pork with chilli & paprika)
  • ½ fresh mango, diced
  • ½ large avocado, diced
  • 2tbsp finely diced red onion
  • 5-6 cherry tomatoes, diced
  • ¼ cup fresh coriander leaves
  • Juice of 1 lime
  • Small chilli, deseeded and finely sliced (optional)
  • 125g sour cream
  • 1tbsp chipotle hot sauce
  • 4 sesame hot dog buns
  • To garnish: coriander and lime wedges

Method

  1. Cook the sausages in a pan or on the BBQ until cooked through and golden.
  2. To make the salsa, combine the mango, avocado, onion, tomatoes, coriander, lime juice and chilli. Season to taste and set aside, then make the sauce by stirring together the sour cream and chipotle sauce.
  3. Assemble the hot dogs by placing the sausages in the hot dog buns, then top with salsa. Drizzle over the sour cream mixture, and finish with fresh coriander and lime wedges if desired.

SHOPPING LIST (for 2)

Meat/Poultry/Fish - 4 pork sausages, 2 salmon fillets, 1 frying steak, 2 boneless skinless chicken thighs, 2 pepperoni sticks

Fruit/Vegetables - 1 mango, 1 avocado, 1 brown onion, 3 red onion, 1 punnet cherry tomatoes, 1 bunch fresh coriander, 1 lime, 2 small chilli, 1 pack fresh mint, 1 pack fresh parsley, 1 pack fresh basil, small bag baby spinach, 2 lemon, 1 carrot, 1 small cucumber, 1 pack bean sprouts, 1 ginger thumb, 2 cloves garlic, 1 capsicum, 1 courgette

Dairy - butter, 75ml milk, 30g grated parmesan, 100g haloumi cheese, ⅓ cup grated mozarella, 75g sour cream

Other - 2 hot dog buns, chipotle hot sauce, 150g arborio rice, 1 cup white wine, 3 cups stock, 1tbsp capers, 2 packs instant noodles, fish sauce, olive oil, rice wine vinegar, 1 puff pastry sheet, 1 egg
