Milk Chocolate Ice Cream Sandwiches

If you live in New Zealand, there is a 98% chance that you have heard about the craziness that has been sweeping through the country. Two of my favourite brands came together in complete harmony to create a totally delicious, but one of the most elusive products of 2014. I won't be the first in admitting though, it is so freaking delicious!
I was dying to create something delicious with it, and after fighting over the first bottle with my family, I hid the second and recreated a Donna Hay recipe I saw on her facebook page, and boy it is good. If you are unable to get your hands on a bottle or three of the original chocolate milk to make the ice cream, just breathe, there are a couple of options you can use instead. Firstly, the easiest option EVER, is to buy a tub of Killinchy Gold Whittakers Milk Chocolate Ice Cream. It is so creamy and beautifully rich, and readily available. The other option, grab yourself a bottle of LRC and a bar of Whittakers milk chocolate and make your own; melt together half a bottle of milk with a bar of chocolate in a pot over a low heat, stir well and cool. Mix with the remaining milk and voila! Your own chocolate milk.
The ice cream recipe is slightly lighter than your ordinary recipe, which pairs perfectly with the sweet and slightly bitter brownie crumbs and chocolate chunks throughout the ice cream itself. It really is a delicious summer treat! X

You will need (makes 12 bars):
Ice Cream:
1 cup single cream 2 cups LRC Whittakers Chocolate Milk 1/2 cup caster sugar 1/4 tsp sea salt 6 egg yolks 100g Whittakers Milk Chocolate, chopped into chunks |
Brownie:
250g salted butter 200g Whittakers dark chocolate 75g cocoa powder 60g self raising flour 4 eggs 350g caster sugar 1/3 cup smooth peanut butter |
Method
- To make the ice cream: In a pot, bring the cream, chocolate milk, sugar and salt to a simmer, ensuring that the sugar has dissolved. Put aside to cool slightly.
- In a bowl, whisk the egg yolks. While whisking, slowly add the warmed milk mixture in small increments. Return to the pot, and set over a low to medium heat. Continuously stir until thick enough to coat the back of the spoon, then strain through a sieve into a container. Cool completely.
- Churn in an ice cream maker according to the manual instructions, or alternatively, pop in the freezer and whisk well every couple of hours. Spread out into a lined tray or container to 4cm thick.
- To make the brownie: Preheat an oven to 170c fan bake, and line a square baking tin. Melt together the butter and chocolate, then set aside to cool slightly. Once cooled, whisk in the eggs and sugar until well combined. Then whisk in the remaining ingredients, aside from the peanut butter, until smooth.
- Bake in the oven for 45 minutes, or until set in the center. When a skewer is inserted into the center, you want the middle to still be slightly wet to create a gooey brownie.
- Finishing: Once the brownie has cooled, place into a food processor and blend until the brownie forms coarse crumbs. Pour into a bowl, and mix by hand with the peanut butter.
- Cut the ice cream into 12 bars, then press the top and bottom with the brownie crumbs. Return to the freezer until ready to serve, then enjoy!
