'Peanut Butter and Jelly' Chia Pudding

My love for chia puddings is growing by the second! The first thing that attracted me to them? Well anything that has the word pudding after it has to be delish! The versatility of chia puddings is so extensive, it is the perfect base for any flavours you wish to add to it.
Chia seeds are rich is omega-3 fatty acids, antioxidants and calcium; making for a super beneficial,filling and delicious breakfast or dessert treat anytime of the year.
I absolutely love the concept of the classic 'peanut butter and jelly' sandwich, combining sweet and savoury to create a perfect marriage of flavours. My dilemma is, I also loooove chocolate, so I thought, why not combine all three?!
Layers of cacao peanut butter chia pudding, freeze dried raspberries and raspberry chia pudding makes for a delish breakfast; but then comes the cherry on top! Vogel's has just released a new product; crunchy peanut butter clusters, and oh my they are tasty! Made from wholegrains and oats, they are the perfect addition to this pudding!

You will need (makes 2):
Chocolate peanut butter layer:
1 cup unsweetened almond milk or cow's milk 1/4 cup chia seeds 1 heaped tbsp cacao/cocoa powder 1 tbsp 100% peanut butter 2 tsp pure maple syrup |
Raspberry layer:
1 cup unsweetened almond milk or cow's milk 1/2 cup raspberries (fresh or frozen), puréed 1/4 cup chia seeds 2 tsp maple syrup freeze dried, fresh or frozen raspberries Vogel's crunchy peanut butter clusters |
Method:
- For the chocolate layer: combine the cacao powder, peanut butter and maple syrup and stir to combine. Slowly add the milk until completely combined. Stir in the chia seeds, cover and refrigerate overnight.
- For the raspberry layer: combine the raspberry purée, maple syrup, milk and chia seeds. Cover and refrigerate overnight.
- Take your chocolate pudding, raspberry pudding, raspberries and peanut butter clusters, and layer into your chosen bowl/jar etc.
- Top with extra peanut butter clusters and raspberries, and enjoy! Easy as that!
