Pavlovas and meringues are a staple dessert in a lot of homes during the summer, and you would be hard pressed to attend a Christmas party and not find one amongst the dessert table. Crisp, slightly soft meringue is laced with fresh whipped cream, then finished with an abundance of fresh fruit; there is nothing not to love.
For day two, I have created a simple meringue wreath based on Donna Hay's meringue recipe, served with dollops of fresh vanilla bean cream and summer fruits. A sprinkling of ruby pomegranate seeds totally make this dessert, shining like little jewels amongst the cream. This dessert is so pretty in its simplicity, and takes a classic dessert to a beautiful Christmas level in a few simple steps; leaving you more time for snuggling up on the couch with Christmas movies and laughs with friends. The idea of fresh strawberries and a generous spoonful of thick cream is making me completely drool as I sit here writing this (pavlova for breakfast is totally okay, right?).

To make this dessert, you will first need to whip up this basic Donna Hay meringue recipe. Instead of creating a round of meringue as you would usually for Pavlova, spoon large dollops of the meringue in a round to create the wreath shape. Pop into the oven following the instructions in Donna's recipe, and leave to cool.
To decorate, you will need:
Place the wreath onto a plate or cake stand, being careful not to break the ring (if you do, don't worry too much. You can easily cover up the cracks with a few more berries and cream).
Whip the cream, icing sugar and vanilla to a soft peak, and spoon over the entirety of the meringue. If necessary, cut the fruits into appropriate sized pieces.
Starting with one of the fruits, place around the wreath, and continue with the other fruits until you have created the look you want.
Finish with the pomegranate seeds, or even some white chocolate shavings and pistachio nuts. Chill until needed and enjoy with friends ♥

- 1tsp vanilla extract
- 1tbsp icing sugar
- selection of fruits: strawberries, blackberries, blueberries, cherries, pomegranate etc
